I was making Laadi pavs (dinner rolls) today and wanted to experiment with an idea that was running in head for the last few weeks. I see these beautiful presentations of bite size servings of various foods and deserts and wanted to try my hand at something similar. I made bread dough using the recipe here: http://handvsmom.weebly.com/4/post/2015/08/easy-homemade-laadi-pav-dinner-rolls.html After dividing the dough in 4 parts, I divided the dough further into 4 more parts. Take each part and using a rolling pin, make a flat tortilla (roti). Take circular cookie cutter or a flower shaped cookie cutter and cut the shapes from the tortilla. Grease a mini-cupcake baking sheet and place the cut bread-tortilla pieces into the moulds. Cover the cupcake sheet with a wet towel for about 1-2 hours then bake at 375°F for about 10 minutes. (The cups will fluff as the dough will rise in the time before baking) If you want the cups more crunchy, then make the bake time about 15 minutes. Fill these cuties with a savory or a sweet filling for an appetizer or a desert.

Those who know me usually raise their eyebrows when I tell them that I have "discovered" cooking. Until very recently, my idea of cooking meant going in the kitchen, whipping up something fast and easy and getting out of the kitchen asap. It worked for so many years until my daughter started saying she wanted to bake with me and be a good "cooker". I now find myself thinking about what to cook and how to make it palatable as well as healthy. |
