Recently there were a couple of occasions when hubby would have dinner out with colleagues so I ended up with some leftover rotis.
I figured a way to turn these into tasty healthy energy bites.
All the ingredients were eyeballed. You can vary them per your taste (eg. increase the amount of dates for more sweetness).
Main Ingredients:
Leftover Rotis
Various dry fruits
I used Dates, Raisins, dried Blueberries and a couple of dried Figs.
Nuts of your choice
I used 1/2 cup Almonds and 1/2 cup Walnuts.
Method:
Toast the rotis to make them crisp. Crumble them with your fingers. In a food processor, add all the above ingredients and run it till it becomes a course and sticky mixture. There is no need to add any water or sugar. The dried fruits are already very sweet. Remove the sticky mess into a bowl and shape them into small bars. I made small balls then flattened them.
My daughter called them energy rounds:).
She gobbled down a few as soon as they were ready and I am now supposed to ensure that a few are included as a snack in her lunch bag :).
