I recently received my new Appe Pan in the mail. This is very similar to an Aebeleskiver pan. I have trying out different quick recipes and today morning's experiment was a huge hit with the family!
It is basically the omlet cooked in the appe pan but the results are so cute!! My daughter who has a hard time finishing an omlet made with 1 egg, asked for 2nd helpings!!
Ingredients:
8 eggs with 4 yolks discarded
1 small onion finely chopped
2 green bell peppers finely chopped
1/2 tsp salt
1/4 tsp red chilli powder (cayenne powder)
1/4 tsp tumeric powder
1 tbs olive oil
Procedure:
Mix all ingredients except oil in a bowl and beat it well. I used the whipping blade attachment in my stand mixer for 1 minute on slow speed.
Heat the appe pan in low flame and put 2 drops of oil in each well of the pan. Using a small deep welled ladle, pour about 1/8 cup of the omlet mixture in each well, cover and cook for 2-3 minutes on low heat. Remove lid and flip each omlet using a wooden flat spoon or a chopstick and cook uncovered for another 2 minutes.
Ta da!!! Omlet Bites are ready!
Enjoy them plain, with chutney, with ketchup or serve them between bread slices.
I couldn't take a picture but one other way to serve these would be in small circular toasted bread or wheat crackers !!
