. Moong sprouts - 2 1/2 cups
. Grape tomatoes - 1 cup
. Red seedless grapes - 1 cup
. Ripe mango - cut in 1/2 inch cubes - 1 cup
. Salt - 1/2 tsp
. Black pepper - 1/4 tsp
. Olive oil - 1 tbp
Method:
Take a medium size mixing bowl for preparing the salad. Wash the sprouts in cold water and add the bowl. If you don't like the raw taste, you can microwave the sprouts after washing for 3 minutes in a glass bowl, first. Wash the grape tomatoes and grapes with cold water and add to the sprouts. Cut the mango and add to the mix.
I have notes below on mango cutting and making sprouts at home.
Add the salt, pepper and oil then mix gently to get the condiments and oil spread over the whole salad.
Serve as is or with something crunchy like baked sweet potato chips.
Additional Notes:
Lentil Sprouting at home:
Wash well your choice of whole lentils and keep in bowl covered in a warm dark place. I cover the bowl with a plate and place in the oven with the light on. The light produces enough warmth. Usually I can see the sprouts in about 24 hours.
Of course there are sprouts makers available in the market as well. I haven't used one so can't comment on it but lot of people use and like them.
Cutting Mango in cubes:
A friend showed me this easy technique.
Other Fruits & Veggies:
Feel free to add pineapple pieces, roasted sweet potato, bell peppers, beets, carrots, apples, pears ....
I'm thinking of having a separate section devoted to salads...
