I was making Laadi pavs (dinner rolls) today and wanted to experiment with an idea that was running in head for the last few weeks. I see these beautiful presentations of bite size servings of various foods and deserts and wanted to try my hand at something similar. I made bread dough using the recipe here: http://handvsmom.weebly.com/4/post/2015/08/easy-homemade-laadi-pav-dinner-rolls.html After dividing the dough in 4 parts, I divided the dough further into 4 more parts. Take each part and using a rolling pin, make a flat tortilla (roti). Take circular cookie cutter or a flower shaped cookie cutter and cut the shapes from the tortilla. Grease a mini-cupcake baking sheet and place the cut bread-tortilla pieces into the moulds. Cover the cupcake sheet with a wet towel for about 1-2 hours then bake at 375°F for about 10 minutes. (The cups will fluff as the dough will rise in the time before baking) If you want the cups more crunchy, then make the bake time about 15 minutes. Fill these cuties with a savory or a sweet filling for an appetizer or a desert.

I have now been making Laadi pav before but still continue to experiment with the recipe. Today, I tried making it using Ruchi Airen's recipe. The difference is, she strongly recommends using hands for dough folding and pushing and I have not patience for that. Especially when my Kitchenaid Stand mixer is sitting right there and staring at me ;). This is the recipe:
Mix the flour, milk powder, salt, sugar and yeast in the bowl of the stand mixer. Melt the butter and add to the flour mix. Start the mixer at a speed of 2 using the dough hook. Heat the water till luke warm and add to the bowl slowly. Run the mixer for about 4-5 minutes. Cover the bowl (I used a plastic cling wrap) for about 10 minutes. After 10 minutes, start the mixer with the dough hook attached for another 9-10 minutes. Then remove the dough into a greased bowl. Cover it with cling wrap and let it rise for about an hour or 2. It should have doubled by then. Divide the dough into 4 parts. Take 1 part on a flat surface and spread it with your hands into a rectangle. Fold the long edges of the rectangle over each other and pinch the edges together to form a long log. Gently roll it using your hands to form a smooth log. Using a pizza cutter, cut the log into 7-8 pieces. Put these pieces back inside the covered bowl to prevent them from drying. Take 1 cut piece on the flat surface. Press it flat with your fingers. Press one corner and fold towards the center. Keep doing this for all the corners and pinch together to hold tight. Flip the dough ball so that the smooth part is on the top and tuck the dough again from all sides to make a tight ball. Repeat this process for the remaining 3 part of the dough. Grease a loaf pan and place the dough balls next to each other. Ruchi's tip was to place them close together so that the dough is forced to rise up instead of sideways. It worked well for me :). Cover these pans with a wet cloth and keep in a warm place for about 1-2 hours. The dough balls will rise to double their original size. Bake at 375°F for 20 minutes. The bread / pav will have a light brown crust. Remove from the oven and place on a cooling rack. |

Until very recently, my idea of cooking meant going in the kitchen, whipping up something fast and easy and getting out of the kitchen asap. It worked for so many years until my daughter started saying she wanted to bake with me and be a good "cooker". I now find myself thinking about what to cook and how to make it palatable as well as healthy. |
